SAUCE ON
jerk chicken • corn fritters • shrimp
Ingredients
2 mango
5 habanero
1 tbsp ginger minced
5 baby carrots or 1 large carrot
1/2 cup golden raisins
1 white Onion
6 garlic cloves
1 cup white vinegar
5 apricots
1 lemon juice/zest
1 cup raisin water (see step 1)
1 tbsp chipotle in adobo sauce
1 tbsp salt
1 tsp pepper
Preparation
1.
Boil raisins in 3 cups of water for 5 min. Put raisins to the side and reserve 1 cup of the water the raisins just boiled in.

On a sheet pan, put habaneros, onion, carrots, garlic, olive oil, salt and pepper. Bake at 400 degrees for 25 minutes.

Into a blender put mango, habanero, ginger, carrots, golden raisins, vinegar, raisin water, apricots, lemon and adobo. Blend for 1 minute.
4.
Put blended mixture into a pot and bring to a boil for 5min
5.
Let cool and add to your favorite shape hot sauce bottle or container.
