SAUCE ON
Brined Pork Loin • Grilled Tilapia • Turkey Breast
Ingredients
1/4 cup Bourbon
1 tbsp Olive Oil
2 tbsp Dijon Mustard
1 Shallot Minced
1 tbsp Butter
1/2 cup Chicken Stock
1 tbsp Honey
1 tbsp Lemon Juice
1 tbsp Fresh Dill
1 tsp Salt
1 tsp Pepper
*Pan drippings from meat or plant based alternative *
Preparation
1.
Cook chicken/pork/plant based alternative in a pan and remove. Let rest. Add olive oil to pan drippings and scrape pan with wooded spoon. Add shallots and cook for 1min.

Turn heat up on pan to medium high. Add bourbon. Let cook for 1min. Using either a lighter or the flame from the stove or grill, carefully flambé bourbon until flame naturally goes out over about 30 sec.

Add dijon mustard, chicken stock, honey, lemon. Cook for 3 minutes and turn off heat. Add butter and dill. Cook for an additional minute until butter is incorporated into sauce. Salt and pepper to taste.
