SAUCE ON
Grilled Pita Bread • Steamed Dumpling • Roasted Tofu
Ingredients
1 tbsp Morton Himalayan salt
2 tsp paprika
1 tbsp cinnamon
2 tsp cumin
2 tbsp minced ginger
5 garlic cloves
1/2 white onion
1 cup dried chili peppers (i.e. arbol) or less for heat level
1 cup white vinegar
1 cup cilantro
2 large tomatoes
1/4 cup white sugar
1 fresh red pepper
1 cup water
1 tsp black pepper
Preparation

Into a microwave safe bowl, add dried chili peppers and top with water. Microwave for 4 minutes until peppers are soft.

Rough chop garlic, onion, red bell pepper, tomatoes and cilantro. Into a medium sized sauce pan, add garlic, onions, and red bell peppers. Cook for 5 minutes.

To simmering pot add tomatoes, cilantro, cumin, paprika, cinnamon, soaked chili peppers, sugar, vinegar, minced ginger and water. Bring to a simmer. Using a blender or food processor, blend until smooth.

Using a sieve, strain out sauce. Add Himalayan Salt.
