Kumquat Cardamom Marmalade

SAUCE ON

sourdough bread • grilled brie cheese sandwich • stuffed french toast






Ingredients


all of the ingredients for the marmalade on a grey speckled white countertop




1/2 cup white sugar

8 oz kumquat

1 tbsp cardamom seed

1 cup water






Preparation


1.

Cover cardamom seed with water and bring to a boil. Turn off heat and let seeds steep in water for 5 min

Slice kumquats into coin shape. Leave peels on.

Add sugar and kumquats to a separate sauce pan than the cardamom steep. Turn to medium heat

Strain out cardamom seeds and add cardamom water to sauce pan with sugar and kumquats

5.

Bring ingredients to a boil until marmalade thickens up and kumquats break down. About 15-20min

6.

Put thickened kumquat and sugar mixture into a bowl. Using a fork, mash the rinds into a marmalade
