SAUCE ON
Southwestern Chicken Salad • Sweet Potato Fries • Deep Fried Shrimp
Ingredients
2 Ears of Corn
1 cup Mayo
1/3 cup Sour Cream
1/4 cup Cottage Cheese
1 Fresh Jalapeño (De seed for heat level)
1/4 cup Milk
1/2 cup Grated Cotija
1/2 Lime Zest and Juice
1 tbsp Garlic Powder
1 tsp Cayenne
1 tbsp Dried Dill
1 tbsp Dried Cilantro
1 tbsp Onion Powder
1 tsp Salt
1 tsp Pepper
Preparation
1.
Using a grill or cast iron pan, roast corn until seared and browned on each side. Slice corn off the cob and set aside.

Into a bowl or food processor put roasted corn, mayo, sour cream, cottage cheese, jalapeño, cotija, garlic powder, onion powder, cayenne pepper, dried dill, dried cilantro, lime juice/zest, milk, salt and pepper. Blend until smooth.

Put in a ramekin and serve with chicken tenders!
