Ingredients
2 Hatch Green Chiles
1 cup Cilantro
1/2 cup Basil
1/2 of a Lime Juice
1/2 of a Lemon Juice
1 Garlic Clove
10 oz Grated Cotija Cheese
1 cup Olive Oil
3/4 cup Pumpkin Seeds
1 tsp Salt
1 tsp Pepper
Preparation
1.
Cut hatch chiles in half. Deseed for heat level. Broil or grill hatch chiles until blistered.

Put roasted hatch chiles, basil, cilantro, garlic clove, olive oil, cotija cheese, pumpkin seeds, lime juice, lemon juice, salt and pepper into a food processor. Blend until smooth.

Serve on pasta!
