SAUCE ON
Bison Cheeseburger • B.L.T. • Sweet Potato Fries
Ingredients
2 egg yolks
1 cup vegetable oil
4 shallots
1/2 stick butter
1 tbsp worcestershire
1 tbsp dijon mustard
1/2 tbsp brown sugar
1/2 tbsp liquid smoke
1/2 tbsp garlic powder
1 tsp thyme
1/2 lemon juice
1 tsp salt
1 tsp pepper
Preparation

Rough chop shallots into rings.

To a medium sized pan add butter and melt. After butter has melted, add shallots. Cook for 5 minutes until translucent. To shallots add brown sugar, liquid smoke, worcestershire, and dried thyme. Cook for 10 minutes until caramelized. Set aside to cool down.

To a cup large enough to fit an immersion blender add vegetable oil, dijon mustard, egg yolks and lemon juice . Submerge immersion blender into mixture and blend moving up and down for 20sec until aioli is formed.
*If using standing blender, first add dijon mustard, egg yolks and lemon juice. Turn on blender and then stream in vegetable oil over 30sec until aioli is formed.

To aioli add caramelized shallots, garlic powder, salt and pepper. Using immersion blender or stand up blender, mix until all ingredients are incorporated
