Ingredients

4 pickle spears

1 red bell pepper

1/4 white onion

1 medium sized cucumber peeled

2 roma tomatoes

2 jalapeños (de seeded for heat level)

2 garlic cloves

1/4 cup fresh cilantro

2 tbsp pickle brine

1 tbsp dried dill

1 tbsp smoked paprika

1/2 lime/zest

1 tsp salt

1 tsp pepper



Preparation

1.

Dice red bell pepper, dill pickle, cucumber, garlic, white onion, jalapeño, roma tomato, and cilantro. Add to a large mixing bowl. To the same bowl add dried dill, smoked paprika, lime juice/zest, pickle brine, salt and pepper. Mix all ingredients together and let sit in fridge for at least 1 hour.

Put on a hot dog and enjoy!
